1. Ras el hanout spiced rainbow trout
Ras el hanout is a Moroccan spice blend used in savoury dishes; often as a rub for meat, or stirred into rice.
Dust 1 tablespoon ras el hanout and 1 teaspoon freeze-dried parsley over 250 g rainbow trout squares. Drizzle with olive oil, sear in a hot pan and serve with a fresh salsa of exotic tomatoes and spring onions.

2. Za’atar & sumac fig salad
Za’atar is a Middle Eastern spice blend. The spice mix may vary but generally it contains thyme, oregano or marjoram, and sesame, and sometimes sumac. Sumac is a lemony Middle Eastern spice with a sour tang, made from crushed red sumac berries.
Dust 2 tablespoons za’atar on a plate. Make balls out of cream cheese and roll to coat in the spice. Arrange on a plate with fresh rocket, fresh figs and pomegranate rubies. Stir sumac into olive oil and lemon juice. Drizzle the sumac dressing over the salad and dig in!
