The right way to serve bubbly

As if you needed an excuse, summer season is upon us and what better way to celebrate than with an ice cold glass of bubbles. To make it easy to serve bubbly the next time you pop those corks, we asked Pieter Ferreira - a.k.a Mr Bubbles - who is Graham Beck's chief bubbly maker for some top pointers on how to serve bubbly the right way:

  1. HOLD AND TWIST THE BOTTLE

    First thing's first. Hold the top of the wire cage with your thumb to keep the cork in place and untwist the wire. Grip the cage and cork tightly in one hand, then use the other hand to twist the bottle's base in a circular motion away from the cork to work it out slowly.
  2. THE RIGHT TEMPERATURE

    Serve bubbly between 6 and 8°C. Carbon dioxide becomes more compressed when it's cold, so the fizz will be more controlled when pouring. Even better, help it along with pre-chilled glasses.
  3. POUR YOUR BUBBLY LIKE A BEER

    This is the best way not to lose the bubbles. Tilt the glass at a 45-degree angle and pour slowly. This way you’ll fill the glass in one pour and will stop any from bubbling over.
  4. DON'T FILL TO THE TOP

    110 ml is considered one serving. In general you should get six glasses from a 750 ml bottle.
  5. PRESERVE THE FIZZ

    Between pours, ensure your bubbles remain lively by keeping the bottle on ice. If you don’t finish it in one sitting, seal the bottle with a good Champagne stopper, which will keep the open bottle fresh for a couple of days when stored in the fridge.
