How to cook the perfect leg of lamb

Everybody loves a roast leg of lamb, and it's so easy to make. Just pop it in the oven, and let it do the work for you. Here’s how… 

  1. Preheat the oven to 180° C
  2. Season the surface of the roast with salt and pepper.
  3. If you want a little extra flavour, scatter a few rosemary stalks over the meat, and rub with crushed garlic. 
  4. Place on a rack on a shallow roasting pan. Roast, uncovered, in centre of oven for 25 minutes per 500g and an extra 20 minutes until cooked. 
  5. Allow to stand 10 minutes before carving for the juices to settle.
