Cheesy Mushroom Baguette

Preheat the oven to 200°C.  Slice baguette lengthways, add pesto and top with mozzarella followed by sliced brown mushrooms. Drizzle with olive oil, season with salt and pepper, add 100g bocconcini mozzarella cheese and bake for 7-10 minutes until cheese is melted and begins to brown.  Remove from oven and serve while hot with optional balsamic glazed cherry tomatoes.
