CHILLI CHICKPEA BUTTER NUT SOUP

Preheat the oven to 240 °C. Place the onion, soup mix and curry paste in a pot and toss to coat.  Pour in 3 cups  hot water, cover and cook for 20 to 30 minutes until veghave softened. Add coconut milk, gently mix and cook open for a further 10 minutes.  Serve topped with toasted almonds, fresh coriander and bread for dunking.
