Raw fennel, & Grana Padano salad

Ingredients

  • 15 ml olive oil
  • pinch of black pepper
  • pinch of salt
  • 1 lemon sliced, to garnish
  • 25 g grana padano shavings
  • 1 large bulb fresh fennel

Cooking Instructions

  1. Thinly slice the fennel bulb and reserve some of the green fronds (chop them up).
  2. Juice and zest the lemon.
  3. Just before serving combine the fennel, Grana Padano and zest and mix well.
  4. Dress the salad with the lemon juice and olive oil and season.
