Lime, mango and ginger cookie sundaes

Ingredients

  • mangoes (750g), peeled and cut in small cubes
  • 10 crushed ginger biscuits
  • 1 cup Whipping cream, lightly whipped
  • 1/4 cup (optional) Double cream yoghurt
  • 1 vanilla pod, split and seeded
  • 1 lime, zested and juiced

Cooking Instructions

  1. Remove the flesh from two mangoes and puree in a blender
  2. Peel and cube the reminaing mangoes. 
  3. Mix the lime zest and lime juice, vanilla seeds, icing sugar, yoghurt and whipping cream together. 
  4. To assemble the sandaes, divide half of the mango puree into 4 glasses and top each with the yoghurt mixture. 
  5. Sprinkle half of the crushed ginger cookies on top of the yoghurt micture, then top with the remaining puree. 
  6. Place the cubed mango on the puree, then top with the remaining crushed ginger cookies. 
  7. Place the sundaes in the fridge to set for 30 minutes.
