JOYA® apple and caramel pancakes

Ingredients
- 100 g Ayrshire butter (cold), diced
- A pinch ground nutmeg
- 1/4 tsp ground cinnamon
- 1/2 fresh lemon leaves
- 1 Tbsp sea salt, plus extra to taste
- 2 cups whipping cream
- 105 g brown sugar
- 6 pancakes (Woolworths brand)

Cooking Instructions
- For the caramel sauce, melt the butter in a pan over medium heat. Add the brown sugar and stir until the sugar has dissovled and the mixture is creamy. Remove from heat.
- Slowly stir in the whipping cream and salt with a wooden spoon and set aside. The mixture will bubble.
- In a bowl, toss the apple slices with lemon juice, cinnamon and nutmeg.
- In another pan, melt 1 tablespoon of butter over a medium heat.
- Add the apple slices and cook them, uncovered, for 4 to 6 minutes until tender, stirring occasionally. Add the soaked raisins and 1/4 of the caramel sauce.
- Heat the pancakes by placing one pancake at a time on a microwavable plate and heat on full power (Cat E/800W) for 30 seconds.
- Place the pancakes browned side down on warmed plates. Top one side of the pancakes with the apple mixture and fold them half over so that the browned sides are visible.
- Drizzle the pancakes and apples with the remaining caramel sauce and top with the pecans and a sprinkling of sea salt flakes.
