Hake with grandilla dressing

Ingredients

  • 2 Tbsp olive oil, to drizzle
  • 4 x 100 g hake fillets
  • sea salt, to taste
  • 1 small handful wild rocket
  • 5 granadillas,pulp removed
  • 4 tbsp honey
  • 2 cloves garlic, chopped
  • 62 ml white wine vinegar
  • 2 tbsp parsley, chopped
  • sea salt and freshly ground black pepper, to taste
  • 1/2 cucumber, sliced julienne
  • 375 ml Greek yoghurt
  • juice of one lemon
  • 1/2 tsp salt

Cooking Instructions

  1. Preheat the oven to 200°C.
  2. Heat 2Tbsp of olive oil in a large ovenproof frying pan until it starts to smoke. Carefully place the fish fillets in the hot oil, making sure they do not touch each other. Fry for 2 to 3 minutes on each side, or until golden.
  3. Season with salt and finish in the oven for 7 to 20 minutes, or until the fish is tender and starts to flake.
  4. Drain on kitchen paper and serve immediately with the granadilla dressing, tzatziki and rocket.
  5. To make the granadilla dressing, squeeze the granadilla pulp, juice and pips into a mixing bowl. Add the honey, garlic and white wine vinegar and mix well.
  6. Add 85ml of olive oil, whisking continuously, then add the parsley and salt.
  7. To make the tzatziki, mix together the seeded, grated and drained English cucumber, yoghurt, lemon juice and salt.
