Ingredients
- 25 White and pink marshmallows, braaied
- vanilla ice cream, for serving
- 45 ml cocoa powder
- 60 g dried cranberries
- 120 g chocolate chips
- 3/4 cup castor sugar
- 350 g unsalted butter, cold and cut into small cubes
- A pinch salt
- 50 g cocoa powder, for dusting
- 500 g cake flour, plus extra for dusting

Cooking Instructions
- Preheat the oven to 180°C and lightly grease a baking tray with cooking spray.
- Place the flour, cocoa powder and salt in a mixing bowl. Add the butter and rub with your fingers until the mixture resembles breadcrumbs. Add the sugar and knead until a dough forms.
- Add the chocolate chips and cranberries. Lightly knead until well mixed.
- Chill for 15 minutes, then roll out the dough to a thickness of 1 cm. Cut into desired shapes.
- Place on the tray and bake for about 8 to 12 minutes, or until cooked through.
- Remove from the oven and cool slightly before transferring to a wire rack.
- Grill the marshmallows over medium coals until soft and sandwich each one between 2 cookies. Dust with cocoa powder and serve with coffee or vanilla ice cream.
