Chocolate cookies

Ingredients

  • 25 White and pink marshmallows, braaied
  • vanilla ice cream, for serving
  • 45 ml cocoa powder
  • 60 g dried cranberries
  • 120 g chocolate chips
  • 3/4 cup castor sugar
  • 350 g unsalted butter, cold and cut into small cubes
  • A pinch salt
  • 50 g cocoa powder, for dusting
  • 500 g cake flour, plus extra for dusting

Cooking Instructions

  1. Preheat the oven to 180°C and lightly grease a baking tray with cooking spray.
  2. Place the flour, cocoa powder and salt in a mixing bowl. Add the butter and rub with your fingers until the mixture resembles breadcrumbs. Add the sugar and knead until a dough forms.
  3. Add the chocolate chips and cranberries. Lightly knead until well mixed.
  4. Chill for 15 minutes, then roll out the dough to a thickness of 1 cm. Cut into desired shapes.
  5. Place on the tray and bake for about 8 to 12 minutes, or until cooked through.
  6. Remove from the oven and cool slightly before transferring to a wire rack.
  7. Grill the marshmallows over medium coals until soft and sandwich each one between 2 cookies. Dust with cocoa powder and serve with coffee or vanilla ice cream.
