  • Fried calamari wraps

Cook frozen Southern-fried calamari according to instructions. Serve in a grilled tortilla wrap with shaved fennel, red cabbage, sliced radish, sliced Granny Smith apples, coriander and coconut yoghurt.

Chef’s tip: Southern-fried calamari strips are a great addition to a platter.

  • Avo toast with peas and ricotta

Toast slices of ciabatta in a griddle pan until crispy and golden grown. Add a smear of ricotta or cream cheese, smashed, blanched frozen peas, fresh avocado, lemon juice, and salt and pepper.

  • Easy homemade blueberry pie

Cut out a square of all-butter puff pastry and score the edges to form a border. Place on a baking sheet, brush with beaten egg and bake according to package instructions until puffed and golden. Top with tangy blueberries: melt 50 g honey over a low heat in a non-stick pan, add frozen blueberries and cook gently for 5–7 minutes until warm. Scoop onto the puff pastry, top with scoops of vanilla ice cream and serve. Ta da!
