#EatWell challenge: Sweet potato

It’s not often that something as delicious and versatile as a sweet potato can be so virtuous too. As the weather gets cooler, try your hand at a new way with these delicious, hearty veggies.

7 WAYS TO ENJOY SWEET POTATOES

1. Chop, skewer and grill. Intersperse with onions, peppers or other veggies for variety.

2. Make sweet potato toast: slice thin, pop in the toaster 2 or 3 times until crispy, and then top with avo, cottage cheese or any other toast topping.

3. Spiralise, sprinkle with a touch of olive oil and salt and roast until crispy. Then use as a topping for salads and soups.

4. Roast, puree and add to your favourite soup of a sweeter taste and thicker texture.

5. Bake, halve and scoop a hole in the middle of each sweet potato half. Crack an egg into each half and put back into the oven until cooked. 

6. Add a baked, cubed sweet potato to chickpeas, garlic, lemon and tahini and blend into a delicious hummus.

7. Mash with olive oil and rosemary for a yummy winter side dish.
