A gammon-centred table
Few things say ‘Christmas feast’ like a beautiful pink gammon crisping in the oven. Try out this simple but spectacular menu to bring out the best in that little piggy.
For the gammon:
1. Potatoes roasted in duck fat
Drizzle duck fat over potatoes. Toss to coat and sprinkle with cumin seeds, black onion seeds and star anise. Add fresh thyme and sprinkle with sea salt. Roast until golden and crispy at 200C° for around 45 minutes.
2. Festive ruby roast tray bake
Take one Woolworths ruby roast of butternut, beetroot and red onion and roast as per instructions. Top with torn kale leaves, tossed in olive oil and sea salt. Place back in the oven for 5–10 minutes until the leaves are crispy. Serve the veggies hot, with blanched brussels sprout leaves, and pomegranate rubies.
3. Creamy parsley sauce
Make a white sauce (or use Woolworths ready-made cheese sauce!). Stir through a spoonful of English mustard and 30g chopped flat leaf Italian parsley. Season to taste.
4. Super summer stone fruit salad
Halve and quarter ripe stone fruit like dessert peaches and arrange on a platter. Top with pea shoots or baby herbs. Add torn pieces of fresh mozzarella and scatter with sweet blanched peas and fresh mint. Drizzle with lemon juice.
For a final festive touch:
Spoon over some syrupy blueberries and add ripe torn figs to the gammon. Add sparkle to the event by making gold salt with Woolworths Edible Gold Shimmer – and sprinkle over the potatoes.
