InstructionsInstructions+

HOB – 20 – 25 minutes • Place 1 part barley in a pot with 3 parts water. • Bring to the boil and cook for 20 – 25 minutes. • Reduce heat and allow to simmer until all the liquid has evaporated. MUSHROOM AND BARLEY SOUP 2 TBSP extra virgin olive oil 1 onion, diced 1 garlic clove, crushed ¼ cup dried porcini mushrooms 400g brown mushrooms, sliced 1 cup pearl barley, cooked 4 cups vegetable stock 4 TBSP crème fraiche 2 TBSP snipped chives Salt and pepper to taste • Heat olive oil in a pot & add onion and garlic clove and sauté until soft. • Add dried porcini mushrooms and brown mushrooms and sauté for 5 minutes. • Add cooked pearl barley and vegetable stock and simmer for 30 – 40 minutes until the barley is tender. • Blend until smooth. • You may need to add more stock depending on your desired consistency. • Season & stir in the crème fraîche and chives • Serve with warm crusty bread

Pearl barley is a whole grain kernel which is polished to give a smooth surface and pearl-like appearance. The polishing process also makes it easier to cook. Perfect for use in soups,casseroles and pilaffs.
