What a cook’s knife is for European kitchens, the Santoku is for Japan and the whole of Asia: so versatile in shape, weight and edge that it can be used for mincing and chopping herbs, vegetables and fruit as well as for preparing fish and meat. 

The sharp blade of a Santoku allows anything from regular to wafer-thin cuts - it is therefore now indispensable in kitchens all around the world. With this Wüsthof Classic santoku knife with dimples of 17cm, you end up with the perfect knife for more detailed cutting tasks. 

Specifically developed to prepare Sushi and Sashimi, but it can do much more than that. Finely cutting herbs is also a piece of cake. Because the blade is enhanced with dimples, small air bubbles emerge. As such food does not stick to the blade.

Wüsthof Classic blade: razor-sharp stainless steel

The blade made from chromium-vanadium steel (X50CrMoV15) is forged from one solid piece of steel. It is sharpened according to Wüsthof’s PEtec technology. This means that for each blade a sharpening angle is determined with the help of a computer. 

Afterwards, it is precisely sharpened on a wet sharpening stone. After thorough inspection each knife leaves the production line, ready for a life of intensive use.

Wüsthof processes the steel in a specific way to make sure it has a high hardness of 58 Rockwell. As such the knife retains its sharpness for a really long time. 

However, if you notice that the knife is not as sharp as it used to be, all you have to do is move it over a honing steel. The result is a razor-sharp knife that is amazing to use.

Wüsthof Classic handle: sustainable and hygienic

This knife is a combination of a forged blade and an ergonomic handle made from black POM, a very sustainable type of plastic. The handle can withstand all substances you find in the kitchen. 

The handle was traditionally and seamlessly riveted to the blade with three rivets. As such dirt can never accumulate in between the blade and the handle. The crop protects your fingers from unnecessary contact with the edge.

CARE 

Dishwasher Instructions

  • Although some Wüsthof products are dishwasher safe, we do not recommend that your knives and scissors be put in the dishwasher. 
  • Blades can knock together, damaging them, and if not washed soon after use, corrosive food particles can damage the blade. 
  • Rather wash your knives with a soft sponge or cloth as soon as possible after each use with warm water and a little detergent, rinse carefully and dry with a towel.

  • All knives require regular sharpening. 
  • Wüsthof manufactures sharpening options that suit all of their knives, including whetstones, honing steels and pull-through sharpeners.
