This vibrant, Thai Inspired Tom Yum or Hot and Sour paste is versatile and can be used to add heat and tanginess to egg fried rice and noodle dishes.  

HOW TO USE

• Add to egg-fried rice and noodle dishes.
• Use to prepare Tom Yum Soup with coconut milk, meat, and or vegetables.
• Oil will separate on standing, stir through before use.

RECIPE SUGGESTION

• Add 1 tablespoon of vegetable oil and half the content of the Hot and Sour Paste jar to medium-sized saucepan.
• Turn the heat to medium-low and bring the ingredients to a gentle simmer. 
• Add 400 ml coconut milk and bring to a gentle simmer. 
• Add a shallot or 1 small brown onion, roughly chopped and 150 g of exotic mushrooms, slicing the shiitake and King Oyster mushroom and breaking the shimeji into individual mushrooms. 
• Add 100 g of Rosa tomatoes, sliced lengthwise. 
• Simmer for 5 minutes. If desired, season to taste with a teaspoon of fish sauce. 
• To serve: divide into 2 - 4 bowls and garnish with fresh coriander, sliced spring onion and lime. 
• For an extra kick of heat, add freshly chopped chilli.
• Serves 4
