Crumbed pork bacon sauce and mash

Ingredients
- 4 crumbed pork chops, prepared as per instructions
- mashed potatoes, prepared as per instructions
- 2 Tbsp Extra virgin olive oil
- 4 sage leaves
- 250 g streaky bacon, roughly chopped
- 4 garlic cloves, finely chopped
- ground pepper
- 2 cups cream
- 50 g pecorino cheese, freshly grated plus extra for garnish

Cooking Instructions
For the sauce:
- Heat the oil over a medium heat before adding the bacon to slowly cook until just about to start crisping. Add the garlic and cook for a minute then season with lots of pepper before adding the cream. Finish with the parmesan cheese stirred through before tasting and only seasoning with salt if needed.
- Serve the sauce over the mash and crispy pork chops
