Grilled Summer Vegetables

Ingredients

  • mange tout
  • 230 g woolworths tenderstem broccoli
  • 350 g woolworths asparagus tips
  • 3/4 cup yoghurt
  • salt and freshly ground black pepper to taste
  • 1 tsp tahini
  • 1 lemon, zested and juiced
  • 1 red chilli, chopped
  • 1 garlic clove, crushed
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 1 x 400 g tin of chickpeas
  • 1 red pepper

Cooking Instructions

For the hummus:

  1. Chargrill the red pepper under the oven grill
  2. Place in a bowl covered in cling wrap and leave to sweat for 15 minutes
  3. Peel off the blackened skin, slice open and remove the seeds
  4. Place the flesh in a blender
  5. Add chickpeas, thyme, paprika, cumin, garlic, chilli, lemon zest, lemon juice, tahini, seasoning and yoghurt
  6. Blitz to make hummus
  7. Set aside

For the vegetables

  1. Run the broccoli and asparagus under cold water
  2. Place on a hot, non-stick griddle pan
  3. Grill for about 5 minutes until tender and slightly charred
  4. Season and serve with mange tout and hummus
