Grilled Summer Vegetables
Ingredients
- mange tout
- 230 g woolworths tenderstem broccoli
- 350 g woolworths asparagus tips
- 3/4 cup yoghurt
- salt and freshly ground black pepper to taste
- 1 tsp tahini
- 1 lemon, zested and juiced
- 1 red chilli, chopped
- 1 garlic clove, crushed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp thyme
- 1 x 400 g tin of chickpeas
- 1 red pepper

Cooking Instructions
For the hummus:
- Chargrill the red pepper under the oven grill
- Place in a bowl covered in cling wrap and leave to sweat for 15 minutes
- Peel off the blackened skin, slice open and remove the seeds
- Place the flesh in a blender
- Add chickpeas, thyme, paprika, cumin, garlic, chilli, lemon zest, lemon juice, tahini, seasoning and yoghurt
- Blitz to make hummus
- Set aside
For the vegetables
- Run the broccoli and asparagus under cold water
- Place on a hot, non-stick griddle pan
- Grill for about 5 minutes until tender and slightly charred
- Season and serve with mange tout and hummus
