Caprese salad with basil pesto dressing

Ingredients
- 3 ripe roma tomatoes, sliced
- 100 g pine nuts, toasted
- 1/2 cup basil leaves, finely chopped
- 4 cloves garlic, chopped
- 2-3 Tbsp Parmesan cheese
- 50 ml olive oil, to drizzle
- 1/2 lemon, cut into 8 slices for garnishing
- salt to taste

Cooking Instructions
- Arrange the fior di latte, tomatoes and basil on two plates.
- To make the dressing, combine all the ingredients in a small food processor and blend until all the ingredients are finely chopped. Alternatively, you can do this with a pestle & mortar.
- Drizzle the dressing over the salad and serve.
