Seared duck and mango salad

Ingredients

  • mango
  • lime juice
  • fresh coriander leaves
  • red onion
  • cucumber, shaved
  • 4 duck breasts
  • 1 tbsp olive oil

Cooking Instructions

  1. Preheat the oven to 180°C.
  2. Heat the olive oil in a pan over a high heat and sear four duck breasts, skin side down, for 4 to 5 minutes until golden and crisp.
  3. Place on a baking tray and roast for a further 10 to 15 minutes, or until cooked to your liking.
  4. Serve with shaved cucumber, red onion and mango salad with fresh coriander leaves and lime juice.
