Tangy coleslaw with a yoghurt dressing

Serves:6-8 as a side

Ingredients

  • 2 shredded baby cabbages
  • 100 g julienned carrots, cooked until soft
  • 125 g julienned beetroots, thinly sliced
  • 1 shredded celery stalk, diced
  • 1 shredded large granny smith apple, sliced into 3 discs
  • 4 Tbsp mayonnaise
  • 50 g Greek yoghurt
  • 1/2 lemon, cut into 8 slices for garnishing
  • 3 Tbsp Wild blossom honey
  • salt to taste

Cooking Instructions

  1. Combine all the salad ingredients in a large bowl.
  2. In a small bowl, whisk together mayonnaise, yoghurt, lemon juice and honey and pour over the salad.
  3. Toss well and serve.

*Salad can be made up to 6 hours in advance and kept covered in the fridge.
