Baby Four Fruits Cakes

Ingredients
- toasted flaked almonds
- 75 g ground almonds
- 500 g Self raising flour
- 100 ml water, lukewarm
- 1/2 tsp baking soda
- 1/4 tsp ground cinnamon
- 5 g mother-in-law spice mix
- 50g treacle sugar (use brown sugar as an alternative)
- 75 g Bonne Maman four fruit preserve
- 1 and a half cups raisins
- 75 g unsalted butter, cold and cut into small cubes
- 1 Free-range egg

Cooking Instructions
- Preheat the oven to 180°C (350°F).
- Put the butter, raisins, preserves, sugar, spices, baking soda and water in a saucepan. Bring to the boil, stirring, then remove from the heat and allow to cool. Add the egg, flour and ground almonds and beat well.
- Line 16 bite-sized muffin tins with unbleached baking parchment or greaseproof paper.
- Spoon in enough mixture to come three-quarters the way up the sides. Sprinkle with the shredded almonds.
- Bake for 12minutes, depending on size, until risen, golden brown and a toothpick pushed into the centre comes out clean.
- Cool then store in an airtight container for up to 2 days.
