Baby Four Fruits Cakes

Serves:makes 16 mini cakes

Ingredients

  • toasted flaked almonds
  • 75 g ground almonds
  • 500 g Self raising flour
  • 100 ml water, lukewarm
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 5 g mother-in-law spice mix
  • 50g treacle sugar (use brown sugar as an alternative)
  • 75 g Bonne Maman four fruit preserve
  • 1 and a half cups raisins
  • 75 g unsalted butter, cold and cut into small cubes
  • 1 Free-range egg

Cooking Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Put the butter, raisins, preserves, sugar, spices, baking soda and water in a saucepan. Bring to the boil, stirring, then remove from the heat and allow to cool. Add the egg, flour and ground almonds and beat well.
  3. Line 16 bite-sized muffin tins with unbleached baking parchment or greaseproof paper.
  4. Spoon in enough mixture to come three-quarters the way up the sides. Sprinkle with the shredded almonds. 
  5. Bake for 12minutes, depending on size, until risen, golden brown and a toothpick pushed into the centre comes out clean.
  6. Cool then store in an airtight container for up to 2 days.
