Tropical fruit salad with avocado

Ingredients
- 1 small pineapple, peeled and sliced
- kiwi fruit, for garnishing
- 2 guavas, peeled and sliced into wedges
- 2 clementines, peeled and sliced into rings
- 1 grapefruit, peeled and segmented
- 8 litchis, peeled and stoned
- 8 granadillas, halved
- 4 limes, zested and juiced
- 2 ripe avocados,pureed
- 50 g shelled pistachios
- A handful mint leaves, to serve
- 6 cups water
- 2 lemongrass stalks, roughly chopped
- 2 tbsp white balsamic vinegar
- 2 granadillas,pulp removed
- 4 Tbsp Wild blossom honey

Cooking Instructions
- Arrange the fruit on a serving platter. Drizzle over the granadilla pulp and lime juice.
- Top with the avocado and sprinkle over the pistachios. Garnish with mint leaves and pour over the dressing just before serving.
- To make the dressing, simmer the water and lemongrass in a small saucepan over a low heat until the water has reduced by a quarter. Remove from the heat and cool.
- Remove the lemongrass and add the remaining ingredients. Whisk until combined.
