Spiced pork meatballs

Ingredients
- 5 tbsp extra virgin olive oil
- 20 g coriander, chopped
- 4 spring onion, thinly sliced at an angle
- 12 Bella tomatoes, chopped into small pieces
- 1 kg pork mince
- 2 tsp salt
- 1 big handful Italian parsley, finely chopped
- 1 cup Fine soft white breadcrumbs
- 1 Red chilli, deseeded and finely sliced
- 4 cloves garlic, crushed
- 6 tsp Moroccan rub
- 1 onions, finely chopped
- 3 tbsp olive oil

Cooking Instructions
- Heat 3 tablespoons of olive oil in a pan over a low heat and slowly caramelise the chopped onions until tender and golden.
- After the onions have been cooking for about 15 minutes, add the Moroccan rub and stir to combine.
- Add the garlic and chilli and cook for 2 more minutes, stirring frequently. Set aside and allow to cool.
- Combine the cooled onion mix, mince, breadcrumbs, eggs, parsley and salt.
- Divide the mince into 12 even-sized round meatballs.
- Heat a pan with the remaining tablespoon of olive oil over a high heat and cook the meatballs in batches until golden on all sides.
- Combine the ingredients for the tomato salsa and mix well. Serve with the cooked meatballs.
