Ingredients: chicken breast fillets, chopped into cubes; large red pepper, deseeded and sliced; roasted cashew nuts; coriander leaves, to garnish; Coconut Oil; Tamari Soy Sauce; Xylitol; fresh lime, juiced; cloves garlic, chopped; fresh chilli, crushed; salt to taste

Ingredients

2 roasted chicken breast fillets, chopped into cubes
1 large red pepper, deseeded and sliced
100 g roasted cashew nuts
a few sprigs coriander leaves, to garnish
1/2 cup Coconut Oil
2 tbls Tamari Soy Sauce
2 tbsp Xylitol
2 tsp fresh lime, juiced
4 cloves garlic, chopped
1 tsp fresh chilli, crushed
salt to taste

Cooking Instructions

Combine all the salad ingredients in a large bowl.
In a separate bowl, whisk together all the salad dressing ingredients.
Pour the salad dressing over the salad then toss well and serve.
