Maple, coconut and pecan granola

Serves:makes about 7 cups
Serving Suggestion:Serve with creamy yoghurt, seasonal berries and a drizzle of maple syrup.

Ingredients

  • 1 1/4 cups Raw pecans, coarsley chopped
  • 1 cup Raw sunflower seeds
  • 1 cup Raw pumpkin seeds
  • 2 x 40 g tubs Simply toasted coconut
  • 2 tsp salt
  • 105 g brown sugar
  • 2 tbsp coconut oil, melted
  • 2 cups Rolled oats
  • 6 Tbsp maple syrup

Cooking Instructions

  1. Preheat the oven to 180 °C.
  2. Place the maple syrup, oats, pumpkin seeds, sunflower seeds, pecans, coconut oil, sugar and salt in a large bowl and mix until well combined.
  3. Spread the granola mixture in an even layer on a baking sheet.
  4. Bake the granola in the oven for about 45 minutes, stirring every 10 – 15 minutes, until it is toasted.
  5. Remove the granola from the oven and add the toasted coconut.
  6. Allow to cool completely before serving or storing in an airtight container. The granola can be stored for up to 1 month.
