Ingredients
- 1 Ciabatta
- olive oil, to drizzle
- 125 g streaky bacon, chopped
- 1 handful baby spinach
- small onion, finely chopped
- 2 tsp chives
- 4 Tbsp canola oil, plus extra for greasing
- 4 Free-range eggs, beaten

Cooking Instructions
- Preheat the oven to 180ºC.
- Line each cup of a greased 6-cup muffin tray with 2 slices French bread, drizzle with olive oil and toast in the oven.
- Fry the bacon and add the baby spinach. Stir until wilted and set aside.
- Fry the onion and chives in the oil.
- Mix with the bacon and spinach.
- Beat 4 eggs and the fried ingredients and mix.
- Spoon into the muffin tray and bake for 10 minutes.
