Basil pesto pasta with mozzarella

Ingredients

  • 250 g fresh, cooked al dente fettucine pasta
  • 125 g fresh basil pesto
  • buffalo mozzarella, torn
  • 140g fresh peas
  • 1 cup broad beans, blanched and outer skin removed
  • sea salt and freshly ground black pepper, to taste
  • 15 g basil leaves, finely chopped

Cooking Instructions

  1. Cook the pasta according to package instructions.
  2. Drain and toss with the basil pesto while still warm, divide between bowls and top with the mozzarella, broad beans and peas. 
  3. Season to taste and garnish with basil.
