Watermelon, olive and feta salad

Ingredients
- 2 tbsp lemon olive oil
- 1/4 red onion, thinly sliced
- 100 g rocket leaves
- 10 black olives, pitted and halved
- 80 g Slimmer’s Choice feta cheese, cubed
- 600 g watermelon, cubed

Cooking Instructions
- Wash the rocket leaves thoroughly, place on paper towel to dry before adding them to a salad bowl.
- Mix through the cubed watermelon, red onion, olives and rocket leaves.
- Add the feta cubes on top.
- Place in the fridge to chill until you are ready to serve.
- Before serving drizzle lemon olive oil over.
