Pickled radish salad

Ingredients
- extra virgin olive oil, for drizzling
- 2 fresh green chillies, sliced
- 80 g fresh wild rocket
- 2 ripe avocados,pureed
- red wine vinegar, to serve
- 6 radishes, thinly sliced

Cooking Instructions
- Mix 6 thinly sliced radishes with ½ cup red wine vinegar, then simmer for 2 minutes.
- Set aside to cool. Serve with 3 ripe halved avocados, 80 g fresh wild rocket, 2 sliced green chillies and a drizzle of olive oil. Season to taste.
