Pea salad with vinaigrette

Ingredients

  • maldon salt and pepper, to taste
  • 1 heaped tsp wholegrain mustard
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 200 g feta, cubed over salad
  • 70 g red onion, finely sliced
  • 125 g mange tout peas
  • 200 g sugar snap peas

Cooking Instructions

  1. Top and tail the Sugar Snap peas and the Mange Tout.
  2. Pour some boiling water over the peas for a couple of minutes then drain
  3. Place everything including the sliced red onions and crumbled feta into a salad bowl.
  4. Make the vinaigrette: Add the oil, white wine vinegar, mustard and seasoning into a jar.
  5. Shake jar to combine.
  6. Drizzle over the salad to serve.
