Pea salad with vinaigrette
Ingredients
- maldon salt and pepper, to taste
- 1 heaped tsp wholegrain mustard
- 2 tbsp white wine vinegar
- 3 tbsp olive oil
- 200 g feta, cubed over salad
- 70 g red onion, finely sliced
- 125 g mange tout peas
- 200 g sugar snap peas

Cooking Instructions
- Top and tail the Sugar Snap peas and the Mange Tout.
- Pour some boiling water over the peas for a couple of minutes then drain
- Place everything including the sliced red onions and crumbled feta into a salad bowl.
- Make the vinaigrette: Add the oil, white wine vinegar, mustard and seasoning into a jar.
- Shake jar to combine.
- Drizzle over the salad to serve.
