Sriracha Asian avocado ritz

Ingredients
- 2 fresh limes cut into wedges
- 1 spring onion, sliced
- coriander, for serving
- 200 g cooked prawns
- organic olive oil, for drizzling
- 1 1/2 Tbsp lime juice
- 2 avocado, peeled and halved
- 1/4 cup Extremely creamy mayonnaise
- 2 tbsp sour cream
- 3 tbsp fish sauce
- 2 tsp sesame oil
- 4 garlic cloves, finely chopped
- 2 thumb sized pieces fresh ginger, grated
- 2 tsp fresh lime, juiced
- Super sour Sriracha hot chilli sauce
- 2 tsp tomato sauce

Cooking Instructions
- Mix the sauce ingredients in a large bowl.
- Add the cooked prawns to the sauce and stir to combine.
- Drizzle the avocado halves with lime juice and olive oil.
- Fill the avocado hollows with the prawn mayonnaise mixture.
- Garnish with the fresh coriander and spring onion and serve with the lime wedges.
