Sriracha Asian avocado ritz

Serving Suggestion:Serve with slices of toasted ciabatta or French bread.

Ingredients

  • 2 fresh limes cut into wedges
  • 1 spring onion, sliced
  • coriander, for serving
  • 200 g cooked prawns
  • organic olive oil, for drizzling
  • 1 1/2 Tbsp lime juice
  • 2 avocado, peeled and halved
  • 1/4 cup Extremely creamy mayonnaise
  • 2 tbsp sour cream
  • 3 tbsp fish sauce
  • 2 tsp sesame oil
  • 4 garlic cloves, finely chopped
  • 2 thumb sized pieces fresh ginger, grated
  • 2 tsp fresh lime, juiced
  • Super sour Sriracha hot chilli sauce
  • 2 tsp tomato sauce

Cooking Instructions

  1. Mix the sauce ingredients in a large bowl.
  2. Add the cooked prawns to the sauce and stir to combine.
  3. Drizzle the avocado halves with lime juice and olive oil.
  4. Fill the avocado hollows with the prawn mayonnaise mixture.
  5. Garnish with the fresh coriander and spring onion and serve with the lime wedges.
