Smoked salmon, mint and strawberry

Ingredients
- 100 g ribbons smoked salmon
- strawberries, washed, hulled and sliced
- to serve fresh mint leaves
- lime or lemon juice, to taste
- 1/3 cup avocado oil
- 1/2 tsp black pepper to taste

Cooking Instructions
- Arrange 8 ribbons of smoked salmon on individual plates or a large platter.
- Slice fresh strawberries in half and scatter them over the salmon, along with fresh mint leaves.
- Squeeze over the lime or lemon juice, to taste.
- Drizzle with a little avocado oil and finish with a good crack of black pepper.
