Smoked salmon, mint and strawberry

Ingredients

  • 100 g ribbons smoked salmon
  • strawberries, washed, hulled and sliced
  • to serve fresh mint leaves
  • lime or lemon juice, to taste
  • 1/3 cup avocado oil
  • 1/2 tsp black pepper to taste

Cooking Instructions

  1. Arrange 8 ribbons of smoked salmon on individual plates or a large platter.
  2. Slice fresh strawberries in half and scatter them over the salmon, along with fresh mint leaves.
  3. Squeeze over the lime or lemon juice, to taste.
  4. Drizzle with a little avocado oil and finish with a good crack of black pepper.
