Quick and easy salmon

Ingredients

  • 250 g salmon fillets, skinned
  • 4 Tbsp olive oil, to drizzle
  • lemon juice
  • 1 red chilli, roughly chopped
  • 4 red onion, thinly sliced
  • 6 tbs coriander
  • 1 ripe avocado, sliced
  • 8 ripe tomatoes, sliced

Cooking Instructions

  1. Slice the tomatoes and avocado into cubes. Wash and roughly chop the coriander. Finely slice the red onion and fresh red chilli. Mix to make a salsa. Season and add a squeeze of lemon juice.
  2. Rub the salmon fillets with olive oil and sear in a hot pan for 2 to 3 minutes on each side.
  3. Plate and spoon over the salsa.
