Quick and easy salmon

Ingredients
- 250 g salmon fillets, skinned
- 4 Tbsp olive oil, to drizzle
- lemon juice
- 1 red chilli, roughly chopped
- 4 red onion, thinly sliced
- 6 tbs coriander
- 1 ripe avocado, sliced
- 8 ripe tomatoes, sliced

Cooking Instructions
- Slice the tomatoes and avocado into cubes. Wash and roughly chop the coriander. Finely slice the red onion and fresh red chilli. Mix to make a salsa. Season and add a squeeze of lemon juice.
- Rub the salmon fillets with olive oil and sear in a hot pan for 2 to 3 minutes on each side.
- Plate and spoon over the salsa.
