Watercress pesto pasta

Ingredients
- 250 g Wholewheat penne
- 25 g Cashew nuts, lightly toasted
- sea salt and feshly ground pepper
- 2 Tbsp white wine vinegar
- olive oil
- 80 g Watercress
- 40 g Parmesan, finely grated
- sea salt and freshly ground pepper, to taste
- watercress, to serve

Cooking Instructions
- In a saucepan of salted boiling water, cook the pasta until al dente. Drain, then dress with spoonfuls of the pesto.
- Top with torn mozzarella and garnish with fresh watercress. Season to taste and serve immediately.
