Watercress pesto pasta

Ingredients

  • 250 g Wholewheat penne
  • 25 g Cashew nuts, lightly toasted
  • sea salt and feshly ground pepper
  • 2 Tbsp white wine vinegar
  • olive oil
  • 80 g Watercress
  • 40 g Parmesan, finely grated
  • sea salt and freshly ground pepper, to taste
  • watercress, to serve
  • Bufala Mozzarella

Cooking Instructions

  1. In a saucepan of salted boiling water, cook the pasta until al dente. Drain, then dress with spoonfuls of the pesto.
  2. Top with torn mozzarella and garnish with fresh watercress. Season to taste and serve immediately.
