Cauliflower and bacon bake

Ingredients
- 1 Head of cauliflower
- 250g smoked streaky bacon
- 350 ml low- fat or soya cream
- salt and pepper
- 100 g mature cheddar, grated

Cooking Instructions
- Pre-heat the oven to 180°c and place the cauliflower into a large bowl.
- In a hot frying pan, fry the bacon until the fat has been rendered and the bacon is crisp.
- Pour the fat and the bacon onto the cauliflower then mix well. Season with salt and pepper
- Transfer the cauliflower and bacon to an oven-proof dish.
- Pour over the cream then cover with foil and place in the oven.
- Allow to bake for 25-30 minutes until the cauliflower is cooked then remove from the oven, remove the foil and top with the cheddar.
- Place back in the oven for a further 5-10 minutes until the cheese has melted.
- Remove from the oven and allow to rest for 5 minutes before serving.
