Onion Bhajis with buttermilk

Ingredients
- 2 cups sunflower oil
- 2 Tbsp garam masala
- 3 Tbsp Flour
- 1 Tbsp turmeric, ground
- salt to taste
- 2 cups buttermilk, plus extra for serving
- 2 onions, cut into thin rings
- 2 tbsp fruit chutney

Cooking Instructions
- Heat the oil in a saucepan. Place the flour into a bowl with the garam masala, turmeric and salt.
- Add 1 cup buttermilk and mix to combine. Slice the onions into rings and then in half. Coat in the batter and deep fry in the oil until golden and crisp. Drain on kitchen paper.
- Mix the remaining buttermilk with the chutney and serve with the bhajis.
FLAVOUR NOTE
Sweet onions love spicy nutmeg and the liquorice flavour of star anise.
