Sparkling wine and glazed gammon

Ingredients

  • 3 kg Large Ready-to-Cook Gammon Avg 3Kg
  • 1/2 cup Spumante Rosé Sweet Sparkling Wine
  • 16-24 florets tenderstem broccoli, sautéed or blanched

Cooking Instructions

  1. Preheat the oven to 160 °C.
  2. To make the glaze, heat the sparkling wine, vanilla bean and apple jelly for approximately 5 minutes until it has slightly thickened.
  3. Place the ham in a roasting pan.
  4. With a sharp knife, remove the skin and enough fat from the ham so that only 1/2 cm of fat remains.
  5. Score the fat with a sharp knife in a crisscross diamond pattern.
  6. Brush the ham with the glaze and place it in the oven.
  7. Bake the ham for 2 – 2 1/2 hours, basting it every 15 minutes with the glaze until golden brown.
  8. Remove the ham from the oven and let it rest for 30 minutes before carving.
  9. Serve warm with the remaining glaze and tenderstem broccoli.
