Clem’s cheesy chicken ramen

Chicken, cheese and ramen – name a better combo!
With a crispy chicken mince and lashings of cheese, this is the ultimate ramen upgrade that we’ve all been waiting for!

Ingredients

  • For the crispy chicken mince:
  • 400 g Woolworths Chicken Mince
  • Salt and freshly ground black pepper to taste
  • 1 T Woolworths Hot Seasoning
  • 1 T Woolworths Paprika
  • 3 T olive oil
  • For the cheese sauce:
  • 200 g cheddar, grated
  • 2 T cornflour
  • 2 cups of milk, extra if needed
  • 2 T Woolworths Whole Chipotle Chillies in Adobo Sauce, chopped
  • For the noodles:
  • 2 x 75 g Woolworths Chicken & Herb Flavoured Quicksticks Noodles
  • Freshly chopped coriander to garnish
  • Thinly sliced spring onion to garnish
  • For the chilli oil:
  • 2 T olive oil
  • 1 T adobo sauce, reserved from the tin

Cooking Instructions

  1. For the chicken mince. Season the mince with salt, freshly ground black pepper and paprika, giving it a mix to combine well. Heat your oil in a pan over high heat. Add chunks of your mince to the pan and allow it to crisp before mixing in the pan, allowing a crust to form. Set the crispy mince aside.  
  2. For the cheese sauce, dust the cheese in the cornflour and add to a pot. Add the milk and place the pot over a medium heat allowing the mixture to slowly heat while stirring.  
  3. Once a smooth sauce is formed add the chipotle and adobo sauce mixing through to combine. 
  4. Prepare your noodles according to the package instructions but don't add the noodle seasoning to the noodles, instead and the sachet of seasoning to the cheese sauce and mix through.  
  5. Once your noodles are cooked strain off most of the water, adding the noodles to the pot of cheese sauce and combining. Divide the noodles between 2 serving bowls then top with the crispy mince and garnishing with freshly coriander and spring onion.  
  6. To finish combine some olive oil with adobo sauce and drizzle over the noodles and serve immediately.
