Roast chicken, potato fondants & veg

Ingredients

  • salt and freshly ground black pepper to taste
  • 1 lemon juiced
  • 350 g green beans
  • 1 sprig of thyme
  • 2 garlic cloves
  • 5 Tbsp butter
  • 700 g Baby Mediterranean potatoes
  • 1 packet (4 halves) Easy to Cook gem squash
  • 1 Easy to Cook savoury rub chicken

Cooking Instructions

For the fondant potatoes:
700g Baby Mediterranean potatoes cut in half
3T butter
2 garlic cloves, smashed
1 sprig of thyme
Salt to taste

For the green beans:
350g green beans, blanched in salt water
2T butter
Salt and freshly ground black pepper to taste
1 lemon juiced

  1. Prepare the easy to cook chicken and gem squash as instructed. For the fondants: Add the potatoes to a pan, cut side down before adding the butter, garlic, thyme and just enough water to cover the potatoes. Season with salt to taste before placing over a medium heat with a piece of baking paper covering the pan allowing the potatoes to steam and slowly reduce the water.
  2. Once the potatoes are soft remove the baking paper and allow the water to completely reduce. The butter will begin to caramelize and start turning darker, once it reaches a dark amber colour dip the bottom of the pan in cold water and keep it there for about 30 seconds to instantly stop the potatoes cooking.
  3. Allow the potatoes to cool slightly before trying to remove them from the pan.
  4. While the potatoes are cooling prepare the green beans by heating the butter in a pan over a medium heat. Once melted and before it starts caramelizing add the green beans and toss to coat well in the butter.
  5. Once the butter begins caramelizing add the lemon juice and season with salt and freshly ground black pepper to taste.
  6. Serve the green beans with the potato fondants, gem squash and perfectly roast chicken.
