Devilled Eggs

Ingredients

  • 12 eggs
  • 4 tbsp mayonnaise
  • 1 tbsp sweet chilli sauce
  • 2 tbsp chives, finely chopped
  • pinch cayenne pepper
  • salt and pepper

Cooking Instructions

  1. Place the eggs into a pot, then cover with cold water.
  2. Place the pot onto the heat, then bring to the boil, and leave to boil for 5 minutes.
  3. Remove from the heat, then leave the eggs to sit in the hot water for another 5 minutes.
  4. Drain, then rinse the eggs under cold water to cool completely.
  5. Peel the eggs, then cut into halves and scoop out the yolk and place into a bowl, place the whites onto a serving platter.
  6. Mash the yolks, then mix in the mayonnaise, sweet chilli sauce, chives and cayenne, then season well.
  7. Spoon the mixture back into the egg whites, or place the mixture into a piping bag and pipe.
  8. Slice the bacon into lardons, then cook in a hot pan until crisp.
  9. Sprinkle the bacon bits over the eggs before serving.
