Freezer-friendly Thai curry

Ingredients

  • 1 x 400 ml can coconut milk
  • lime served on the side
  • 1 kg frozen mashed potatoes, prepared as per instructions
  • 100 g cashew nuts, toasted and roughly chopped
  • 4 tbsp coriander, roughly chopped, extra for garnishing
  • 1 tbsp fish sauce
  • 250 g green vegetable medley
  • 450 g frozen ready to cook prawns
  • 80 g Thai green curry paste
  • 3 tbsp canola oil

Cooking Instructions

  1. Heat the oil over a medium heat. Add the curry paste and cook for 2 minutes or until fragrant.
  2. Add the coconut milk and bring to a simmer.
  3. Add the frozen prawns and cook until the prawns are almost tender
  4. Add the frozen greens and cook for another 4 minutes
  5. Make the mashed potatoes as per package instructions
  6. Season the curry with fish sauce
  7. Garnish with the coriander and cashew nuts
  8. Serve over Woolies mashed potatoes and a twist and a lime on the side.
