Chicken caesar sandwich

Ingredients

  • 4 free-range skinless chicken breasts
  • 350 ml organic chicken stock
  • 250ml Full cream yoghurt
  • 8 anchovy fillets, roughly chopped
  • 1/3 cup fresh parsley,finely chopped
  • chives
  • 2 slices rye bread, sliced
  • 150g feta, thinly sliced
  • 2-3 heads cos lettuce, for serving
  • black pepper, ground
  • a pinch sea salt, plus extra to taste

Cooking Instructions

  1. Place a medium-sized saucepan over a medium heat and add the chicken breasts and stock.
  2. Bring to a gentle simmer and poach the chicken breasts for 15 to 20 minutes, or until tender but with the flesh still firm to the touch.
  3. Drain, then slice the breasts.
  4. Add the yoghurt, anchovy fillets, parsley and chives to a bowl and blend until combined.
  5. Spoon over the rye bread and top with the sliced chicken.
  6. Finish off with a few slivers of feta and a cos lettuce leaf, season to taste and serve immediately.
