Carb conscious minestrone

Ingredients
- 4 rashers streaky bacon, chopped
- 1/2 onion, finely chopped
- 2 cloves garlic, finely sliced
- olive oil
- 4 large courgettes, cubed
- 200g brown mushrooms, sliced
- 1 large red pepper, deseeded and sliced
- 1 x 400 g tin chopped tomatoes
- 2 tbsp tomato paste
- 1 bay leaf
- 2 sprigs fresh rosemary, leaves picked and chopped
- 4 sprigs thyme
- 500 ml good chicken stock
- sea salt and pepper to taste
- pesto, for serving
- Parmesan, for serving

Cooking Instructions
- In a large pot, fry the bacon until the fat has rendered and the bacon is crisp.
- Remove from the pot, leaving the fat behind.
- If necessary add a little olive oil then saute the onion until soft and translucent.
- Add the garlic and vegetables and saute until golden brown.
- Add the chopped tomatoes, tomato paste, herbs and stock and lower the heat.
- Allow to simmer gently for 15-20 minutes until all the vegetable are cooked.
- Season to taste then serve with a dollop of basil pesto and grated parmesan cheese.
