Sunny-side-up breakfast-tart special

Ingredients

  • 500g ready-made puff pastry, thawed
  • Butter
  • 8 rashers streaky bacon, parcooked
  • 1 fried Free-range egg
  • balsamic crème

Cooking Instructions

  1. On a baking tray, place a rectangular stack of puff pastry and brush with melted butter.
  2. Place in a hot oven until puffed and golden.
  3. Pan-fry strips of streaky bacon until crispy.
  4. Top the pastry with the bacon and a golden fried egg and drizzle over some balsamic crème.


Cook's note:
Balsamic Creme from Modena (Italy) is made using a combination of concentrated grape must and aged balsamic vinegar. There's no cream in it, but it is reduced until it has a creamy consistency. Available from Italian delis.
