Double-decadent French toast

Ingredients

  • 3 organic eggs
  • 125ml organic full cream milk
  • 2 Tbsp melted butter or extra vigin olive oil
  • 1 French baguette, sliced horizontally
  • 7 Tbsp maple syrup
  • 1 Tbsp rose water
  • 100 g strawberries, chopped
  • 120 g blackberries, fresh or frozen
  • 500 g cherries, pitted
  • 300g double cream Ayrshire yoghurt
  • rose petals, for garnishing

Cooking Instructions

  1. Lightly whisk the eggs and milk.
  2. Heat a Teflon-coated griddle pan until warm. Add the butter or olive oil.
  3. Dunk the baguette slices into the egg mixture, coating both sides thoroughly, then fry on both sides until golden brown.
  4. In a small saucepan, combine the syrup and rose-water and heat slightly.
  5. Serve the toast topped with the berries and cherries, and a dollop of each of the yoghurts, and drizzle with the warm syrup mixture.
  6. Garnish with the rose petals if you are using them.
