French toast with blueberries and bacon

Ingredients
- 1 French baguette, sliced horizontally
- 8 extra-large free-range eggs
- 300 ml full cream milk
- butter, for frying
- 200 g fresh blueberries
- 6 Tbsp Castor sugar
- lemon juice

Cooking Instructions
- Pre-heat a non-stick frying pan over medium heat.
- Whisk together the eggs and milk then soak the slices of bread in the mixture.
- Fry the French toast in a knob of butter until golden brown and cooked through on both sides.
- In the meantime, combine the blueberries, sugar and lemon juice in a small saucepan and allow to cook over high heat for 5-7 minutes until the blueberries have become syrupy and have released their juices.
- Serve the French toast with the blueberries and bacon.
