Chimichurri steak sandwiches

Ingredients

  • 4 tbsp Woolworths onion marmalade
  • 2 plum tomatoes, sliced
  • 8 slices Woolworths Berliner bread
  • wild rocket
  • olive oil
  • 60 ml olive oil
  • salt and pepper
  • 4 Woolworths beef steak
  • 2 cloves garlic, minced
  • salt and black pepper
  • 1 tsp dried oregano
  • 1/2 red onion, chopped
  • 1/2 lemon, juiced
  • 1/3 cup red wine vinegar
  • olive oil
  • 30 g flat leaf parsley

Cooking Instructions

  1. For the chimichurri, place all the ingredients into a blender and blend until finely blended.
  2. Heat a griddle pan until smoking hot. Season the steaks, then drizzle with olive oil.
  3. Cook the steaks in the hot griddle then place onto a plate and drizzle with the chimichurri. Allow to stand and marinade for a few minutes while you assemble the rest of the sandwich.
  4. Brush the bread with the oilive oil, then toast in the griddle pan on both sides.
  5. Spread the toasted bread with some onion marmalade, then top with rocket and sliced tomatoes and finally the chimichurri steak.
