Chimichurri steak sandwiches

Ingredients
- 4 tbsp Woolworths onion marmalade
- 2 plum tomatoes, sliced
- 8 slices Woolworths Berliner bread
- wild rocket
- olive oil
- 60 ml olive oil
- salt and pepper
- 4 Woolworths beef steak
- 2 cloves garlic, minced
- salt and black pepper
- 1 tsp dried oregano
- 1/2 red onion, chopped
- 1/2 lemon, juiced
- 1/3 cup red wine vinegar
- olive oil
- 30 g flat leaf parsley

Cooking Instructions
- For the chimichurri, place all the ingredients into a blender and blend until finely blended.
- Heat a griddle pan until smoking hot. Season the steaks, then drizzle with olive oil.
- Cook the steaks in the hot griddle then place onto a plate and drizzle with the chimichurri. Allow to stand and marinade for a few minutes while you assemble the rest of the sandwich.
- Brush the bread with the oilive oil, then toast in the griddle pan on both sides.
- Spread the toasted bread with some onion marmalade, then top with rocket and sliced tomatoes and finally the chimichurri steak.
